Spring is here... and that means summer is right around the corner. Time to shed some of that extra winter weight. If you're not from the north you probably won't understand this, but I definitely have a summer body and a winter body. I'm just less active in winter and I always seem to gain weight. Hot cocoa doesn't help the situation either. I went to play tennis for the first time last week and I could barely fit into last summer's shorts. This year I'm making a pact to put my shorts on once a week.. just to keep myself in check. Anyway, here are some very simple salads I've made lately, and I thought I'd share.
Spinach, pecan, dried cranberry, and feta.
Pasta salad with a whole mix of veggies and a little pesto.
Spinach, straweberries, almonds, and feta.
(very similar to the one above, but very different tastes)
